Quiche Lorraine - South Beach Diet Recipe


* 8 eggs
* 1/4 cup diced red pimentos or roasted peppers
* 1 teaspoon dry or fresh parsley flakes
* 1 cup half-and-half
* 1 teaspoon salt
* 1/4 teaspoon black pepper
* 1/4 teaspoon ground nutmeg
* 1/8 teaspoon white pepper (optional)
* 1 teaspoon baking powder
* 12 oz. shredded Swiss cheese
* 12 oz. cooked crisp turkey bacon crumbled
* Greased 8 inch square baking pan or deep dish pie pan


* Preheat oven on Bake to 350 degrees.
* Mix eggs, half-and-half, pimentos and spices in a large bowl with a wire whip. Fold in cheese and turkey bacon.
* Pour into greased pan and bake for 40 minutes until golden brown. (Since ovens vary, 40 minutes is an approximate cooking time and you should test for doneness by sticking a wooden toothpick in the center. If it comes out clean, and the Quiche is golden brown, it’s done.
